  • ● 1/2 cup (100g) granulated sugar
  • ● 1 and 1/2 teaspoons baking powder
  • ● 1/4 teaspoon baking soda
  • ● 1/2 teaspoon salt
  • ● 1/2 cup (8 Tbsp; 113g) unsalted butter, cold and cubed
  • ● 1/2 cup (120ml) buttermilk, cold*
  • ● Egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk or buttermilk
  • ● Optional: 2 Tablespoons (25g) granulated sugar mixed with 1/2 teaspoon ground cinnamon

Instructions

1️⃣ Preheat Oven: Preheat your oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan or any 3-4 quart baking dish.

2️⃣ Prepare the Filling: In a large bowl, mix together the peach chunks, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, nutmeg, ginger, and salt. Spread the mixture evenly into the prepared baking pan. Bake for 10 minutes to start the bubbling process. Remove from the oven and set aside as you prepare the topping. Keep the oven on.
